One 9-ounce package soba noodles, cooked and chilled according to package directions
1 red bell pepper, stemmed, seeded, membrane removed, and cut, lengthwise, into slices
2 cups cooked edamame (soybeans)
3 tablespoons chopped chives plus more for garnish, if desired

Organize your ingredients.

Combine the soba noodles with the bell pepper, edamame, and chives. Add about 3/4 cup of the vinaigrette, tossing to coat well. Place the noodles on a serving dish.
Cook’s Tips:
You could use almost any type of noodle or pasta for this dish.
This dish pairs perfectly with Grilled Tofu, chicken, pork or salmon.
