Peanut Butter and Bacon Tart

This deliciously rich Peanut Butter and Bacon Tart comes together quickly.

Serves 10
Cooking Time: 30 minutes


20 chocolate sandwich cookies, such as Oreo
1 -3/4 cup chunky peanut butter
1-1/2 cup confectioners’ sugar
5 slices cooked bacon, cooled and crumbled
1-1/2 sticks unsalted butter, melted
7 ounces chocolate
Optional garnish – 1/2 cup dry roasted peanuts


Organize your ingredients.

Process cookies in food processor until fine crumbs. Spread cookie crumbs in tart pan. Using your hands, press the bottom and shape up the sides.

In a medium mixing bowl, stir together peanut butter, bacon and powder sugar until well combined.

Drop the peanut butter filling in large spoonsfuls into the cookie crust. Carefully spread peanut butter filling in cookie shell to the edges and smoothing the top. (see Cook’s Tip below)

In a double boiler, melt chocolate and butter stirring until smooth. Pour melted chocolate over the peanut butter filling and spread to cover the tart.

Sprinkle peanuts across the top. Cover and chill until ready to serve.

Cook’s Tip: 

When working with difficult to spread filling have a glass of warm water off to the side for dipping your offset spatula from time to time. It will help release the filling from the blade therefore making it easier to spread.
